Lobster Pie
Ingredients:
1 lb Lobster Meat
1ž2 cup Ritz crackers, coarsely crushed
1ž4 cup Oyster crackers, coarsely crushed
4 Tbsp butter, melted, divided
1 Tbsp fresh onion, minced
1ž2 tsp thyme
1ž2 tsp black pepper
1ž2 Tbsp parsley
Directions:
1. Blend Ritz and oyster crackers together.
2. Sauté onions in 2 Tbsp of butter.
3. Add thyme and black pepper.
4. Blend this mixture well with the crackers.
5. Place lobster in a casserole dish and top with cracker
mixture.
6. Drizzle remaining butter on top and bake at 375º F
for 20-30 minutes.
